Chef Charles Clark's benchmark choices set the tone for success. Favorite appetizers include the foie gras and a crab bisque that warms the soul. Delicate sea bass slathered in mango chutney is doused in Rioja wine broth with delicious effect. Desserts are rotated seasonally, so allow your server to flaunt the day's selections.

Ibiza features Spanish Sundays with paella and sangria served beginning at 5 p.m. Two people minimum for the paella and call ahead to order.
