Authentic Southern BBQ gets an upscale spin at The Republic Smokehouse & Saloon. The Midtown restaurant, which is a collaboration between pit master Cedric Williams and the talent behind Hearsay on the Green, opened in March 2015, delivering fall-off-the-bone ribs to the masses.
Inside the expansive, 10,000-square-foot venue, which was most recently home to BlackFinn American Grille, guests will find a Texas-meets-Twin Peaks inspired atmosphere. Old state maps hang on the walls, along with Longhorn installations, vintage pistols and more than two-dozen flat-screen TVs, while the staff tend to guests in plaid tops and cut offs. Near the entrance, a stage will host live country music acts Thursday through Saturday nights. On the menu, guests will find traditional smokehouse offerings (highlighted by the house-made sauces), along with a few outside-the-box items like quail and duck.
