James Beard-winning Chef Chris Shepherd has never been one to shy away from a challenge. That’s why the culinary talent, known for celebrating the city’s diversity at his Montrose-set Underbelly, embraced the opportunity to get outside his comfort zone when the building at 1658 Westheimer came up for a five-year lease.
He, along with business partners, Kevin Floyd, Whitney Mercilus and Steve Flippo launched their One Fifth restaurant in January 2017—a five-year project that will feature five different restaurant concepts. Each concept will open September 1 until July 31, closing each August for renovations. With each iteration, fans can expect new décor, a new menu and new staff uniforms. In its first year, Shepherd offers his spin on a steakhouse, though there will also be a cold seafood focus and an emphasis on ingredients that aren’t indigenous to the area.
One Fifth is open from 5 p.m. to 11 p.m., daily.
