Republic Diner + Sojubang fits right in offering lunch, dinner, and late night dining options in the spirit of a Korean pub in downtown Seoul. The pub is features Korean pub favorites served in a traditional family-style portion.
Ken Bridge—the brains behind local haunts like Pink’s Pizza, Lola and Shepherd Park Draught House—closed the former Witchcraft Tavern & Provision Co. to make room for the exciting venture. He worked closely with acclaimed Dosi chef Jordan Asher on the Korean menu. Asher, named one of the hottest up-and-coming chefs in Houston by the Houston Press, made a menu featuring Korean bbq, heaps of marinated beef Kimchi fries, regular and infused soju, exotic rice hot pots, and Korean fried chicken, among many other delicious offerings.
Republic Diner is open 11 am – 10 pm Sunday-Thursday and stays open 11 pm or later Fridays and Saturdays.
