James Beard award-winning Chef Chris Shepherd turned the success of his restaurant Underbelly into a concept for his new restaurant UB Preserv. UB Preserv pushes the limits of dining to offer new and interesting menu options. Further, the menu at UB Preserv aims to tell the story of Houston with dishes that are inspired by the different people and places encountered across the city. With so many culturally diverse influences across Houston, Shepherd identifies intricacies and cuisines that shape the city, transforming them into menu items.
Diners can enjoy pork dumplings with crispy shallots, grilled octopus, duck egg curry, Tejas heritage crispy chicken and even a seafood tower with king crab, shrimp, scallops and oyster. The dinner menu is a plethora a Vietnamese, Mexican, Mediterranean influences with a Texas twist. Another treat is the dim sum-style brunch offered on Sundays. Small, medium and large plates are perfect to share and include some of the dinner menu items. Other dim sum options include boiled pork dumplings, wok-friend rice cakes, crispy snapper puffs, beef curry hand pie and smoked baloney fried rice.
The team at UB Preserv puts as much thought into their drinks and libations as they do their food menu. There is an extensive wine list with options both by the glass and bottle. Over 19 bourbons are on the whisk(e)y menu and 31 scotches are on hand for guests to choose from. Further, there are plenty of r(h)um and brandy options as well. The craft cocktail list includes fun drinks like the Adult Entertainer which is dry gin, passion fruit, lime, vanilla and a sidecar of rosé and the Year of the Dog which includes vodka, salted plum, lemon and soda.
