Today whatever you crave is being served out a truck, trailer or cart

Taco trucks may have paved the way, but there's a whole new crop of mobile menu concepts that are joining the fleet. From cupcakes to chicken and waffles, crepes to pocket pies, just about everything your taste buds desire is being served on wheels. You'll find them on random street corners at lunch, camped out on the edge of local farmers markets each week and parked strategically between the nightclub and your car at 2 a.m. Face it, resistance is futile.

Bernie's Burger Bus: Talk about old school. Bernie's Burger Bus is a newfangled take on the classic American hamburger. Everything is made from scratch using all natural Black Angus. And each burger has a school-based personality, from "The Principal" with bread-and-butter pickles and garlic roasted tomatoes (electives include bacon and Texas cheddar) to "The Kindergarteners" two mini-burgers with bleu cheese and Applewood smoked bacon. The handcut fries are served with an aioli that's pretty spectacular.

Eatsie Boys: The Eatsie Boys say their food trailer concept was "born from late night hunger." People haven't been going hungry with these guys around. The pork snuggies are slow-cooked Harrison Hog Farms pork belly, homemade pickles, green onions and homemade hoisin on steamed buns. Da Bomb is marinated chicken or tofu with cilantro and a lot more on a baguette. Good stuff. You'll find the Eatsie Boys all over town and at weekly farmers markets.

El Ultimo:
Head to the corner of Long Point and Antoine in west Houston for hearty egg-and-chorizo-filled breakfast tacos served adjacent to a coin-operated car wash. Order one of Ultimo's aguas frescas - a fresh fruit drink popular in México - to go with your meal.

Frosted Betty: Forget the ice cream man, he's got nothing on Nicole Mora's treat-filled dessert truck. Want to know where to look for those delicious cupcakes, cookies and brownies? Stalk Mora's Twitter page (@luvfrostedbetty) for regular updates on where she's currently camped out, selling sweet snacks to faithful followers.

Fusion Taco Truck
:
Don't be thrown by the name. Julia Sharaby may be hocking tacos from a truck, but they aren't anything like the ones Houston's seen before. From the commercial kitchen set in her glossy black truck, Sharaby turns out a menu loaded with Asian and South American flavors like prime beef Asian sliders, chicken satay tacos and spicy curry pork flautas. Good Dog Hot Dogs
:
When it comes to hot dogs, there's your standard frank with mustard or relish. And then there's Good Dog Hot Dogs. These guys are raising the bar on the wiener with Texas-made dogs, local artisan buns and handcrafted toppings and condiments. You'll often find them in Midtown and Montrose. Hubcap Grill

The folks at Hubcap Grill have been cooking up great burgers at their downtown location for years. Now they've taken to a burger mobile to share the juicy goodness. The mufaletta burger is a must, oozing olive salad. Or try the Greek burger with feta and kalamata olives. There's even a sticky burger for the adventurous, topped with - wait for it - peanut butter. Hubcap's truck can usually be found at Liberty Station Bar on Washington Ave.

Jarro Café & Trailer
:
Fans have flocked to Guillermo "Memo" Piñedo's Gessner-set taco truck for more than a decade in search of sirloin tacos and hot-as-fire salsas. The biz has enjoyed such success that Memo opened a free-standing restaurant next door to his taco stand. 1521 Gessner Rd.

Mam's House of Ice Snowballs
:
Even in the middle winter, in Houston, it's always a good time for a New Orleans-style sno-ball. Forget the crunchy, ice-packed snow cones of the past, Mam's does things a little differently. Visit the Heights-set, robin-egg blue trailor for pillowy-soft mounds of shaved ice topped with homemade syrups and flavors.

Melange Creperie
:
A Parisian-style creperie on Lower Westheimer, Melange has become a Montrose staple. You can get crepes filled with two ingredients "mélange a deux" or three "mélange a trois." The menu is always changing based on the freshest ingredients but you'll always find sweet as well as savory options, such as ham, egg and cheese. 

Oh My Pocket Pies

Oh My Pocket Pies: Proprietor Joe Phillips and partner Joann Torok turn out slow food made fast from their hard-to-miss "Big Red" food truck just east of downtown, in the Kim Hung Mall parking lot. Dig into flakey pocket-size bundles filled with comfort food staples like Salisbury steak, chicken pot pie and twice-baked potatoes.

No Borders
:
Sylvia's Enchilada Kitchen took some of the best recipes from its Houston locations and launched their mobile concept, No Borders late last year. From Frontera tacos made with smoked chicken, pork or turkey to the tasty elotes (roasted corn on the cob) there's nothing on this menu that will disappoint. Our favorite? The Mexico City enchiladas, two chicken enchiladas with Sylvia's famous salsa verde garnished with sour cream. Follow No Borders on Twitter @NoBordersTruck.

Taqueria Tacambaro:
Tucked behind The Heights' Canino's Produce is a red-and-white trailer known for its Mollejas - Mexican-influenced sweetbreads - and tacos de tripitas. Top your selection with the shimmering-green tomatillo salsa and wash it down with a cold Coke.

Zilla Street Eats
:
Think the Godzilla of food trucks, and you've got Zilla Street Eats. These guys aren't playing around with a couple of menu items. We're talking pulled pork sandwiches, bacon cheeseburgers, gourmet mac ‘n cheese, fried Nutter Butters. We could go on and on. So let's. Baby back ribs, chicken ‘n waffles, hand cut fries.
