Mike Tran, owner of the Upper Kirby-area’s Aka Sushi House, has debuted a new ramen shop in Chinatown.
The menu at Tiger Den focuses around four varieties of ramen: traditional tonkotsu (pork, noodle soup), garlic black bean, miso and tantan ramen (minced pork, peanuts and chilies). And Tran is cutting no corners, spending a day-and-a-half on his broth prep and making his ramen noodles in house.
If ramen isn’t your thing, try the yakitori, which are grilled skewers of everything from chicken gizzards to pork belly to beef tongue. Diners are turning out en masse for this authentic take on Asian specialties in the heart of Chinatown.
